  1. 1.2kg beef brisket
  2. 2 carrots, quartered lengthways, cut into 3cm lengths
  3. 2 garlic cloves, crushed
  4. 3 stalks lemongrass, finely chopped
  5. 1/3 cup tomato paste
  6. 2 tablespoons fish sauce
  7. 1 teaspoon Chinese five-spice powder
  8. 3 cups salt-reduced beef stock
  9. 200g packet dried rice noodles
  10. 3 cups bean sprouts, trimmed
  11. 1/2 small red onion, thinly sliced
  12. Fresh mint leaves, to serve
  13. Fresh coriander leaves, to serve
  14. Chilli oil, to serve
  15. Lime wedges, to serve

  1. Trim beef of all fat and sinew. Cut into 3cm pieces. Place beef, carrot, garlic, lemongrass, tomato paste, sh sauce, five spice and stock in slow cooker. Cover. Cook on LOW for 4 hours (or on HIGH for 2 hours).
  2. Cook noodles following packet directions. Drain. Divide noodles among serving bowls. Top with beef mixture. Sprinkle with bean sprouts, onion, mint and coriander. Drizzle with chilli oil. Serve with lime wedges.
